Start the smoker and preheat to 200-225 degrees F.
Remove the silver skin from the back side of the ribs. Use a knife tip to lift the corner and then grab with a paper towel to help grip and pull the skin off.
Combine the mustard, ¼ cup of apple juice and spread thinly on the top and bottom of the ribs before lightly coating with Lil Bubbies BBQ rub.
Smoke ribs with meaty side up for 3 hours.
Lay out large sheets of aluminum foil on a nearby table and transfer the ribs, lightly “boating” the foil so it holds liquid.
Coat with brown sugar, drizzle with honey, add pats of butter evenly over the surface of the meat. Pour in the remaining apple juice.
Cover with foil and crimp edges to contain liquid and steam. Return to smoker for 2 hours.
Remove ribs from foil (careful about the steam!) and coat all sides of the ribs with Lil Bubbies BBQ sauce. Return to smoker for 45 minutes – 1 hr.
Remove and let rest for 10 minutes before serving.
